Description
The harvest begins in October, as soon as the fruits begin to change color; within 12 hours the olives are processed at the mill.

“Crystalline yellow-green and quite dense. It envelops the nose with aromas of hay and hazelnut, tomato paste, dried pepper and black pepper accompanied by hints of salt and caper. Soft and with a good spicy quality, a fatty thread and a bitter finish of thistle, aubergine and almond”
