Description
Chestnut honey is a typical product of the Mediterranean, the bees obtain it from the flowers of the chestnut tree (Castanea sativa) and it is collected between June and July, when the chestnut trees that overlook the vine and olive cultivations are in bloom. It is a rather liquid honey, which hardly crystallizes, due to the greater presence of fructose compared to glucose. In case of crystallization, this occurs slowly and in a not always homogeneous manner.
Chestnut honey has a dark brown color with intense amber hues.
Pairings: It has a strong and penetrating scent, floral and balsamic, aromatic and woody. The taste reflects its aroma, bitter and incisive, and goes well with strong flavours. It is ideal with meats, game and mature cheeses, and dishes with a slightly smoky flavour
